Mmm Mmm Good!

so many of you may know that my history does not include cooking, but lately i have been taking a likeing to it! and if you ask james, have become quite an amazing chef in my own right! (to the point he has agreed to build me an island!!) one of his favorites is chicken pot pie! one that is a great standby! so i decided to share my mouth-watering, make you want to sing, gotta have seconds recipe....

ChIcKeN pOt PiE
crust: pillsbury pie crusts (inless you know how to make your own...go for it show off!)

filling:
1/3 c. butter (i know, just don't think about it!)
1/3 c. chopped onion or minced onion
1/3 c. flour
1/2 t. salt
1/4 t. pepper
1 1/2 c. chicken broth (i just use the whole can)
2/3 c. milk
21/2-3 c. shredded cooked chicken
2 c. steamed veggies (i use potatoes, carrots, and peas or celery!)

Heat oven to 425 degrees. prepare pie crusts (this is why you just buy pilsbury and unroll them...so easy!) melt butter in med. sauce pan over med. heat. add onions, cook for 2 mins. add flour, salt, and pepper and stir till well blended. gradually stir in broth and milk (together) cooking and stirring until bubbly and thick. add chicken and veggies stir. spoon into pie crust. top with second pie crust. cut several slits (make a design if you want) bake at 425 for 30-40 mins. let stand five minutes before serving! Ta Da!!

i made it last night too! and as you can see this one was not one of my bests! but i will teach you a secret that i learned from my mistake! don't put MORE veggies and MORE chicken then it calls for, even if you are REALLY hungry! it will only, overflow! don't worry it was still very scrumptious!!



now, this has nothing to do with Chicken Pot Pie, nor my awesome cooking skills but check out my little buddy!

you know how there are those outfits that you buy (or like me, recieve as gifts) while you're pregnant and KNOW that your baby will look so cute in them! and CAN'T WAIT till they fit! this is one of those outfits! and today he wore it for the first time. to bad we had nowhere to go, because i was right, it does look SO cute on him!! i'm starting to believe that he likes new clothes almost as much as his mommy! he seems to get soo excited when he sees me ripping off tags! dang straight bowen! nothings better than new clothes, just wait till i introduce you to all day shopping extravaganzas!

Yumm,.. I am going to have to try that! So I buy Bailey a new outfit and I usually want to wait until I know we are going out so people can see how cute it is,.. but we never go out, It's quite sad! What a cute baby!! Those blue eyes are amazing!

cute outfit. yeah for shopping and new clothes...Kinley had a shirt last year that said "i like to shop with my mom" i made her wear it whenever we went shopping. it was great! Bowen can totally borrow it..if he doesn't mind wearing pink.

what a cute little boy! He looks darling in that color! (who says that about boys... lol So do you cook your vegies before you put them in? I would love to try the recipie but HATE hard potatos and carrots- so just a question....

hey josie, just cut them small and steam them first! i hate hard veggies too!

and marci, that sounds like a darling shirt. don't worry bowen is comfortable in his masculinity, he can pull off the pink!! i saw a shirt on a baby a while ago that said "my whole life is being blogged about!" isn't that funny!

Oh...I have a question. Do you use the dried flakes that are minced ever? If so, does it turn out as well as if you use a real onion?

I tried to make chicken pot pie once...I nearly burnt the house down and it was horrendous, but Tyler ate it. Oh well! I will definitely try this new one; I am always looking for new easy recipes! And I just have to say that I love reading your blogs; you are so hilarious, it makes my day! Jack loves looking at Bowen's pictures too: he waves hi and starts giggling!

denise, yes i have used both. it works just the same! if you use a real onion just chop it up good. if you use the dry flakes you can disguise the onion from the "onion-haters" in the world!!
